Holiday treats: Pecan date cookies - WRAL.com

I make a salad with dates for Thanksgiving each year. And each year, I'm left with a partial bag of chopped dates in the cupboard.

That's why I've started making these pecan date cookies each year. Not only do they let me use up that bag of dates, they're also absolutely delicious — chewy with just the right amount of sweetness.

Pecan Date Cookies

Adapted from AllRecipes.com

1 cup butter, softened
1 1/3 cups white sugar
3 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 teaspoons water
1 1/2 cups chopped pitted dates
1 cup chopped pecans

Preheat oven to 375 degrees.

With a mixer, combine and cream the butter and sugar. Add in the eggs and mix in.

In another bowl, mix the flour, baking soda, cinnamon and cloves. Add the dry ingredients into the butter and sugar mixture and mix until all combined.

In a small bowl, mix together the water and dates. At the dates and pecans into the batter.

On a cookie sheet lined with parchment paper, drop spoonfuls. Bake for 8 to 10 minutes. Let cool on a wire rack before serving.
